we're back!

Hi everyone! Oh my it feels like a lifetime since I've blogged. hi hi hi It's so good to be back! As many of you  know the rustic rooster shuts down Christmas day though New Years. We've done this every year for 12 years now. It's a rooster tradition... I know it might frustrate some, but it's really the best time for us to spend time with family & friends. Plus, we get to re-charge our mind, body & souls! Damn it feels good! I love our tradition! I'm just getting back into the office today... Definitely ready to work. Here are some fabulous photos that have inspired me this morning... Cheers!

apple picking

OK, I'm just going to say it... This was my first adventure to Julian, Ca! Oh my gosh it was amazing!  We did get very lucky... Last weekend was the last week of picking for the season. Thank God we got to do it... The kids loved it! I will never forget this outing. It was so peaceful {besides me getting carsick} & serene. Even though it was scorching hot, we didn't mind it at all. Life seemed so simple in Julian.  I've gotta admit It felt good to go slow & enjoy my family... 
  
   
   
Now, if I only can  turn this bag of apples into this tonight warm apple pie!  I'll will be a superstar in my kids eyes! It's all about positive thinking!
Ingredients



1 1/4 cups all-purpose flour (spooned and leveled), plus more for rolling

6 tablespoons unsalted butter, room temperature

1/4 cup packed light-brown sugar

3/4 teaspoon salt

1 recipe Our Favorite Pie Crust

2 tablespoons fresh lemon juice

4 pounds Granny Smith apples (8 to 10)

1 cup granulated sugar

1 cup raisins

1 teaspoon ground cinnamon


Directions


1.Preheat oven to 375 degrees. Make crumb topping: In a medium bowl, combine 1 cup flour, butter, brown sugar, and 1/4 teaspoon salt. Work with fingers until large clumps form; freeze.

 2.On a lightly floured piece of wax paper or parchment paper, roll dough into a 14-inch circle. Carefully fit into a 9-inch deep-dish pie plate, gently lowering dough into bottom and sides of pie plate without stretching (you will have a 2-inch overhang all around). Refrigerate.

3.Place lemon juice in a large bowl. Peel, core, and slice apples 1/8 inch thick, transferring them to the bowl as you work. Add granulated sugar, raisins, cinnamon, remaining 1/4 cup flour, and remaining 1/2 teaspoon salt; toss to combine. Transfer apple mixture to pie crust, pressing in firmly. Fold dough overhang over filling, pleating it as you work your way around pie; press dough firmly against filling.

4.Bake 45 minutes, then sprinkle apple filling with crumb topping. Continue to bake until golden and bubbling, 30 to 45 minutes more. Cool at least 6 hours before serving.

we saw... we conquered Santa Barbara in a week! I absolutely love it there! The homes are just adorable, the stores are fabulous, the style is exquisite & the food is delectably delicious! I'm refreshed & recharged to conquer the world now! The kids go back to school on Monday... We got all of our unnecessary wiggles & giggles out, so now it's time for me to beat the streets & get some work done! See you all Tuesday bright & early! Hope everyone had a great week... ?!?! I sure did {even got a little tan too}!

GO! It's vacation time for the Scully's! Yes!!! I'll be out of the office till next next Tuesday... Don't get mad if I don't return calls or e-mails. Sorry I'll be relaxing, soaking up some sun, diving into a new book, drinking adult drinks, playing with my kids & enjoying some preciouse moments with my husband. Ahhh pure bliss!  Santa Barbara here we come...

little nervous

I'm off to see Cars 2 tonight with 3 kids... Oh My what did I sign up for? I know we're going to have a blast! Ryan will not stop talking about this darn movie. From the moment he wakes up he walks into my bedroom & asks for a Cars 2 birthday party. 1.) I'm still a sleep & my black out blinds are still down & 2.) Ryan's Birthday isn't till April. So you get my point that he's a little obsessed right now. Do you feel my pain? I did promised him we could go tonight. Yippie for me! Then I had to go & open my big mouth & let Taylor invite a friend... Oh let me remind you all Daddy isn't going tonight. It's just me, myself & I! I can do this... It will be fun! So if you see me at the movie theaters tonight just ignore that I have tied all 3 kids together on a huge rope & I have a large drinking object in my hand.  Keep on walking... lol  Hope you all have a fabulous weekend... Any good plans? Please tell!!!

me & my baby

Well, this weekend me & my baby ran the Encinitas 1k together. I can't even tell you how excited Taylor {& mommy} was to do this little run... Originally I was going to have her do the 5k with me, but decided to start her off small. Test the waters... See if she even liked to run with out stopping. Oh my gosh Taylor ran the entire 1k & faster than me. I was cracking up the entire run. I think we have a little runner over here! Ya  Can't wait til next year... Watch out Encinitas 5k here comes Taylor Michelle {maybe Ryan too}!

eye candy



I'm just drooling over these pictures this morning {thanks Lonny Magazine}. I couldn't sleep last night because I was dreaming of a potential new clients space I saw last night. So of course I start looking at every home decor magazine & design blog for inspiration. My mind is bursting with eye candy right now...

This bathroom makes me very happy... Love that sailboat painting! The middle kitchen with the chalkboard doors is such a winner in my books... How fun for a family! The last kitchen makes me feel very sophisticated... Don't you just want to throw a cocktail party in it? 

 On another note... I'm so excited for this weekend because!

1.) It's the Encinitas Street Fair this Saturday & Sunday {Stop by the rooster & say HI!}.

2.) I'm being whisked away by my sweet husband for a romantic getaway {much needed}.

3.) We're leaving for Palm Springs with the kids this Sunday... Yippee!

weekend {recap}


It was absolutely beautiful this weekend in San Diego...  So Sean & I I jumped at the opportunity to get our little ones outside. The rain has kept us cooped up & crazy. We pumped the air up in our bike tires, shined our seats... Put  our helmets on & took off to Mission Bay. It's such a perfect place to take the kids for a simple & stress free bike ride. Plus, in the middle of our ride there's a wonderful park that the kids play at for hours. We biked back to the car got some lunch & every one was happy & super tired {Ryan}!

Then I decided to stop by one of my design clients homes because their floor was just completed... I was dying to see it! It turning out fabulous! They unrolled one of their newly purchased rugs... I can't believe how much everything is starting to come together. I'll show you more pictures later. So exciting!

Once the day was done... Right before bed I started reading Taylor Pippi Longstocking. I feel she's at that age where her mind is racing & she's creating little worlds in it. Isn't the imagination wonderful! Taylor's my little Pippi!

run forest run!


OK so we have a little time {May 14th}... But, I wanted to announce it now!

My daughter, Taylor, really would like to run this year with me. I told her all about it last year & how much fun mommy had {remember here}. I couldn't believe how family oriented & involved it was. It wasn't all about the fast pace of a race it was about laughing, chatting & getting out with friends & family. Loved it! So Taylor & I are going to start training now. I'm sure you're all asking why start now... Hello, she's 4 1/2... Taylor needs time to run, learn & build up her mileage. lol Of course I'm not going to have her run the entire race. She can do what she wants. But, it's nice to talk about fitness with her... Get her heart racing & a little sweat going. Something all children should be doing... Being active! Come join me & my family & friends get active & run the Encinitas 5K with us... I'll keep you posted as the event gets closer. Plus, I love supporting my town! Go Encinitas Go!

been there done that

I can now say I've been to a Pawn Shop... Oh what a joy! After our 100 mile walk today around town with the kiddos I got this crazy idea to hit up a pawn shop in Oceanside. Sean was so thrilled {thought I was actually insane & didn't want to go}.

One of our customers said, she found a vintage Cartier watch at a pawn shop. Ever since then I've been dreaming, planning & plotting to go to one. Well, I did it. OK I was so let down. Maybe because this pawn shop wasn't anything special. After I left I felt kind of sad... I started thinking about all the wedding rings that were sold because they needed money. Wow... Their were so many. How awful is that. Hey, you've gotta do what you've gotta do... That's life! Right!?!? After I browsed the watch section to only find Rolex's & one Tiffany & co. watch I started over to the rings... Then my son decided to thrown a tantrum right by the cashier table because we told him he couldn't change the channel on the TV... Ya not such a good thing... So we left. If any of you know of another good pawn shop let me know... I'm in to do this again! Please!!! Have any of you purchased something good at a pawn shop? Do tell!
