hmmm... what are you?

 


Ok, are you 1.) In it to win it & do the best & prettiest Christmas wrapping job ever!!! Or 2)  "Oh my gosh it's the day before Christmas & I need to get a million gifts wrapped, Where's the gifts bags & tissue paper?"  Or 3.)  I have so much left over Christmas wrapping paper from last year I'm going to just use what I have & not spend another dime! Ha I'm sure all of you are one of these people! In the past I have been 1 & 2... This year for some reason I'm 100%  number 3. I have so much from last year that I just want to use what I have so than next year I can get all new wrapping paper. ha ha Just keeping it real in a social media world! Which one are you?

W I T H  C O C O N U T 
 C R E A M  C H E E S E  I C I N G 

Ingredients

Coconut Pound Cake

  •  cups all-purpose flour
  • 2 teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup butter unsalted, at room temperature
  • 1 cup sugar granulated
  • 3 large eggs
  • ¾ cup coconut milk unsweetened
  • ½ cup unsweetened coconut shredded

Coconut Cream Cheese Frosting

  • 2 ounce cream cheese softened
  • 4 tablespoon butter unsalted, softened
  •  cups powdered sugar same as icing sugar or confectioners sugar
  • 2 tablespoon coconut milk or regular milk
  • ½ cup unsweetened coconut shredded

Instructions

Prepare your oven and loaf pan: Preheat oven to 325 F. Spray a loaf pan with cooking spray or grease it with butter.

Mix the batter: In a large bowl whisk together the flour, baking powder and salt. In a separate bowl, cream the butter with the sugar for a few minutes until light and fluffy. Add in the eggs and combine well. Add 1/2 the flour mixture, ½ cup coconut milk, mix,  then remaining flour and remaining coconut milk. Fold in the shredded coconut.

  • Bake the cake: Pour the batter into your prepared pan and bake for 1 hour or until a toothpick inserted comes out clean (a few crumbs are okay). Allow the cake to cool for 10 minutes in the pan. Run a knife around the edges of the cake, remove it from the pan, and let it cool fully on a wire rack.
  • Make the icing: While the cake is cooling, beat the butter and cream cheese until silky. Beat in the icing sugar and coconut milk until smooth. Fold in half the shredded coconut.
  • Finish the cake: Once the cake has cooled fully, spread the icing over the top. Coat the icing with the remaining shredded coconut. Slice and enjoy!

backyard heaven

 




And just like that we're done with our landscaping... Well, 99.9999% done. Still have to do the minor little things like... String the bistro lights by the back patio table, plant potted plants and add a door to the outdoor shower... But as of right now I am so excited with the way everything turned out. The little details will soon fall into place.  We worked with an incredible landscaper and his team... And let me tell you these guys kicked butt! 5 days a week with 3 to 6 guys working from 7:45am to 4:30pm everyday. They were so nice and incredibly respectful. I would hire his team back in a heartbeat... 5 star company in my books!

Hi Bloggers!!! Happy September 1st! I think this is going to be a really good month... Shhhhh its my birthday month! LOL

ingredients

  • 1 extra-large zucchini or 2 medium/large zucchinis, cut into 16 1/2-inch slices
  • Sea salt and freshly ground black pepper to taste
  • 1 lb. lean ground beef
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 4 slices of cheddar cheese, cut into quarters to get 4 small squares
  • Avocado oil cooking spray

Mixed Berry Puff Pastry Tart

ingredients

  • 1 sheet puff pastry thawed
  • 3 cups mixed berries frozen or fresh
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons maple syrup
  • 2 tablespoons cornstarch
  • 1 egg for egg wash

  • Instructions
    • Preheat the oven to 400˚F, line a baking sheet with parchment paper, and set aside.
    • In a mixing bowl, mix together frozen mixed berries, lemon juice, lemon zest, maple syrup, and cornstarch.
    • Roll out the thawed dough and cut it in 4 rectangles. Place each piece on a baking sheet 2 inches apart.
    • Scoop the berry mixture between 4 pastry sheets, leaving about ½-1inch on the edges. Then fold these edges over the berries.
    • Brush the edges with egg wash.
    • Bake at 400˚F for about 20-25 minutes or until the dough is golden/brown color.
    • Serve warm with a scoop of homemade ice cream.

    Notes

    Puff Pastry. When thawing the dough, don’t try to unfold it right away, or it will crack. Let it sit on the counter for about 20-30 minutes, then carefully start to unfold it step by step. Also, make sure it doesn’t get too warm, otherwise it won’t rise.
    Cornstarch. I would not recommend to skip this ingredient. The berries will produce a lot of juices while baking and will be too runny without the cornstarch.
    Mixed Berries. I like to use a mix of frozen berries, as I always keep them in my freezer. So, when I want to make the dessert I have them on hand. You also can you any fresh berries you have at home.
    Maple Syrup. If you don’t have maple syrup, you can use honey and regular sugar instead.
    Egg. If you don’t want to use eggs in this recipe, you can use melted butter or milk as “an egg wash”.
    Can I make these tarts ahead of the time? Yes, but they won’t taste the same. I always like to make this recipe right before I want to serve it. This way it will be warm to serve with a scoop of ice cream on top and the pastry will be perfectly flaky.
    Can I reheat it? You can reheat it at 325˚F for about 15 minutes. However, when you reheat pastry it won’t be as flaky as freshly baked.
