Summer Strawberry Coconut Milk Popsicles

INGREDIENTS:  

Creamy strawberry base

• 1 1/2 cups fresh strawberries, trimmed and halved
• 13.5 oz can full fat coconut milk 
• 1 tablespoon lemon juice 
• 4 tablespoons maple syrup 
• 1 teaspoon vanilla 
• pinch of sea salt 

Fresh strawberry ripple

• 1 1/2 cups fresh strawberries, trimmed and halved 
• 2 tablespoons maple syrup 
• 1 tablespoon lemon juice 
• pinch of sea salt 

• INSTRUCTIONS:

  • Blend all of the ingredients for the creamy strawberry base together until smooth and creamy. 
  • Pour mixture into a glass pyrex, or another vessel that is easy to pour from. 
  • Rinse out your blender and add all ingredients for the fresh strawberry ripple. Blend fresh all the ingredients for the fresh strawberry ripple until mostly smooth – a few little chunks of strawberries are fine! 
  • Layer the creamy strawberry base and the fresh strawberry ripple in popsicle molds until full. Add popsicle sticks and freeze until solid.

It's almost time for summer! Time for some fun in the sun! Time to find yourself a new swimsuit! Ok... Maybe swimsuit shopping isn't my favorite thing to do, but I LOVE spending time at the beach and pool, so there really isn't any way to avoid it. But maybe swimsuit shopping doesn't have to be the torture that so many of us find it to be. Here are a few tips to make your swimsuit shopping more enjoyable:

* Get a faux tan so that you can see what you will look like in your swimsuit once you get some summer color. 

* Step outside of your comfort zone and try on styles that highlight your assets, rather than choosing one for other reasons. 

* Give yourself ample time to look for your new swimsuit so that you don't feel pressured to choose one that doesn't fit your criteria. 

* Take a few sizes with you to the fitting room, including the size you think you are, and one size up. Always try on the bigger size first. It always feels better to size down than to size up.

Summer is almost here! For those of you who will be spending time at the beach, there is a good chance that you will return home with a few shells that you found along the shore. But what do you do with those beautiful treasures? Here are some of the ways that I like to display my shell collection...

- Arrange them in baskets and bowls. 

- Put them in glass jars containers such as cylinders, hurricanes, and vases. 

- Arrange them in a vignette on shelves and furniture.

- Use larger pieces as a paperweight. 

- Turn a larger shell upside down and use it as a bowl to hold jewelry. 

I hope that these tips inspire you to make the most of your collection and bring some seaside charm to your space!
