Summer Strawberry Coconut Milk Popsicles
Creamy strawberry base
- 1 1/2 cups fresh strawberries, trimmed and halved
- 13.5 oz can full fat coconut milk
- 1 tablespoon lemon juice
- 4 tablespoons maple syrup
- 1 teaspoon vanilla
- pinch of sea salt
Fresh strawberry ripple
- 1 1/2 cups fresh strawberries, trimmed and halved
- 2 tablespoons maple syrup
- 1 tablespoon lemon juice
- pinch of sea salt
INSTRUCTIONS:
- Blend all of the ingredients for the creamy strawberry base together until smooth and creamy.
- Pour mixture into a glass pyrex, or another vessel that is easy to pour from.
- Rinse out your blender and add all ingredients for the fresh strawberry ripple. Blend fresh all the ingredients for the fresh strawberry ripple until mostly smooth – a few little chunks of strawberries are fine!
- Layer the creamy strawberry base and the fresh strawberry ripple in popsicle molds until full. Add popsicle sticks and freeze until solid.
