Summer Strawberry Coconut Milk Popsicles


INGREDIENTS: 
 

Creamy strawberry base

  • 1 1/2 cups fresh strawberries, trimmed and halved
  • 13.5 oz can full fat coconut milk 
  • 1 tablespoon lemon juice 
  • 4 tablespoons maple syrup 
  • 1 teaspoon vanilla 
  • pinch of sea salt 

Fresh strawberry ripple

  • 1 1/2 cups fresh strawberries, trimmed and halved 
  • 2 tablespoons maple syrup 
  • 1 tablespoon lemon juice 
  • pinch of sea salt 
  • INSTRUCTIONS:

    • Blend all of the ingredients for the creamy strawberry base together until smooth and creamy. 
    • Pour mixture into a glass pyrex, or another vessel that is easy to pour from. 
    • Rinse out your blender and add all ingredients for the fresh strawberry ripple. Blend fresh all the ingredients for the fresh strawberry ripple until mostly smooth – a few little chunks of strawberries are fine! 
    • Layer the creamy strawberry base and the fresh strawberry ripple in popsicle molds until full. Add popsicle sticks and freeze until solid.
