food revolution...

In 2010, British celebrity chef, Jamie Oliver, began a movement in America called the Food Revolution. This year Food Revolution Day took place on May 17. With this movement, Jamie teaches a “Better Food Better Life” to millions of people. The foundation aims to change the way people eat by educating every child about food and empowering families with cooking skills, which fights against the epidemic of diet-related diseases.
With the kids about to get out of school, here are a few healthy snacks that you can prepare for them this summer!

*{yogurt pops}*

These yogurt pops are a great alternative to the sugary treats found in your local supermarket.  Feel free to mix things up and use different fruits along with the bananas. They are perfect on a hot summer day as a treat or healthy dessert!

{serves 6}

ingredients:
2 small ripe bananas
6 ounces frozen strawberries or 1 cup  frozen
blueberries
2 cups non-fat plain yogurt
2 tablespoons honey

directions:
- Peel and slice your banana and put it into
a food processor or blender with the frozen
berries, yogurt and honey. Whiz it up on a
low setting until really smooth.
-Divide the mixture between 6 paper cups
or plastic molds - you want about 4 ounces
in each.
- Place the pops in the freezer for 10
minutes, then gently poke a popsicle stick
into the center of each one.Place back in the
freezer for at least 3 hours, or until frozen
solid (this may work nicely with our Zoku!).

*{sloppy joes}*

Sloppy Joe is an American classic and a kid-favorite! Now you can make it yourself and know exactly what your kids are eating!
{serves 4}
ingredients:
¾ pound lean ground beef or turkey
1 yellow onion, peeled and diced
1 green bell pepper, cored seeded and diced
¾ cup tomato purée
2 tablespoons cider vinegar
1½ tablespoons light brown sugar
1 tablespoon honey
2 teaspoons Dijon mustard
½ teaspoon chile powder
½ 15-ounce can kidney beans, drained and rinsed freshly ground pepper, to taste

for serving:
4 whole wheat hamburger buns or whole wheat wraps
1 cup shredded lettuce

directions:
- Put a large sauté pan over a medium head
and crumble in the beef or turkey. Fry until
the meat starts to brown then add the bell
pepper and onion. Continue cooking, stirring
occasionally, until the veggies start to
soften – this should take around 5 to 10
minutes.
- When the veggies are tender, add the tomato
purée and stir into the meat, then add the
vinegar, brown sugar, honey, mustard and
chile powder to the pan and give everything
a really good stir. Add the beans, season
with salt and pepper, then bring to a boil
and cook until the sauce is nice and thick.
- To serve: pile the Sloppy Joe mix onto the
bottom of a bun or middle of a wrap, top it
with lettuce and close up the sandwich or
roll up the wrap.

are you feeling it...

I sure am! I'm loving this entire combination today...

Starting with fashion and ending with a living room setting... Absolutely Love!  For some reason this color scheme consisting of blue and white just warms my heart. I feel calm just looking at all of this! You can go soft or vibrant with your blue tones... Never be afraid! I tend to lean towards the more softer tones, but on occasion I do step out of the box. What do you think?

one month ago...

WOW... I can't believe it's been one month  since my father passed. I haven't been able to stop thinking about him. I'm ok with that! My memories of my dad have been so happy and actually extremely calming to me. Not gonna lie I do get a little overwhelmed here and there... At home, at the office... Even just coordinating something little, like dinner. The one thing that seems to be helping me is looking at this one picture that I have of him on my cell phone. His face, his smile, his stare,  no joke puts me at ease. Peace takes over my body and I actually smile back at him. Shhhh I do have an occasional conversation with him as well. Thanks dad!

Knowing that he's in Gods hands and pain free has released an energy that I don't think anyone will ever understand until they've experienced loosing a loved one. His passing has made me want to work harder...  And more! I want to help people and actually smile more. Hey, I'll take that any day than sitting in bed and crying! No bon bons for this lady {giggle}!

Thank you all so so much for the sweet gifts, beautiful flowers, touching cards, heart felt calls, thoughtful texts and comforting hugs! You all know who you are... I cried opening each and everyone. They were tears of joy! Thank you! I read all the cards over and over again. I look at texts each day. The power of family and friends are huge. You really know who your friends and family are when tragedy strikes. I've realized what people want when tragedy happens in a family... Comfort and love. Just, I'm sorry for your loss. 5 simple words. They mean so much to an individual!  Thank you all so so much!

My life has changed in so many ways right now... If I don't embrace it I might as well give up. I can't give up... I need to fight and try harder for me, for my family as well!  My children need to see that because papa is in heaven doesn't mean you give up on life. You work harder and make a difference in the world. I want my father to look down from heaven and say good job, Alex! I knew you could do it! I know he is! We were so alike in so many ways... I do miss his pep talks and his alternative route he would send me on if I was frustrated or upset. He would remind me to always sit on the other side of the room and listen to people. Don't close up and judge. Got it dad, I won't forget... I'll chug on and continue what you have preached to me.  Now I need to create my own path. Change my routes when the going gets tough. I will dad... I will!

My mom is actually my hero... She has shown me what a woman with unbelievable grace and style really looks like. She is wonderful! Having her best friend leave her and have to deal will all the awful after math of a loved one dying she has been such a trooper. Not going to lie... She's hurting so bad. Who wouldn't... Her pain is so deep. I'm doing everything for my mom... Always and forever!   She's amazing! Love you mom!

My kids talk about my father all the time... I actually look forward to their little questions. They seem to love to talk about him right before bed. It truly makes me think.  Do you think papa is flying right now? I bet he's listening to techno and dancing. Do you think he's with his mommy and daddy? Their questions are endless... So innocent and pure!

Well, Summer is almost here... Are you ready for it? I'm sure not! hahaha I do welcome it with open arms... I can't wait to swim and go to the beach. I need the summer sun to warm my heart and soul! Dad it's been a month since you've left us... Crazy! Can't wait to go to the beach this summer with you! Kind of jealous you don't have to wear sunscreen {wink}

Thank you all for listening to me...
Thank you!

persian love

My mother and I have always had a love for Antique Persian rugs. Shhhhh I'm slightly obsessed! I grew up with them... They were all over my parents home. So at an early age I've been schooled by my mom what to look for and what not to look for. Of course new I'm super picky on what I put in my home and my clients homes... I guess that's a good thing {smile}! Now I'm sharing my Persian rug passion at the rooster... We've just received a ton of wonderful rugs today. All of them are   fabulous! Lets just say, If I had room for them... I would take them all! Stop by the rooster and take a peek! You won't be disappointed!

happy cinco de mayo

{smokey watermelon-jalapeno margarita}

ingredients:
·         1 jalapeno chile pepper
·         2 ounces tequila (I used a Blanco, or white, un-aged tequila for this)
·         1 ounce freshly squeezed lime    juice
·         1 ounce watermelon puree
·         ¾ ounce agave nectar/syrup
·         Hickory smoked salt for rimming the glass

Muddle the jalapeno in a shaker or a pint glass.
Add the tequila, lime juice, watermelon puree and agave nectar.  Shake with ice and strain into a double old fashioned glass filled with fresh ice and rimmed with hickory smoked salt.  Garnish with a slice of watermelon and lime wedge.

are you kidding me... yummy

* cheesecake cupcakes *
ingredients:
  • 2 1/4 cups finely crushed graham crackers (from 18 sheets)
  • 3 Tbsp granulated sugar
  • 6 Tbsp salted butter, melted
  • 4 (8 oz) pkg cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 3 Tbsp all-purpose flour
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • Salted Caramel Sauce or Strawberry Sauce, recipes follow
directions:
  • Preheat oven to 350 degrees. In a mixing bowl, whisk together crushed graham crackers with 3 Tbsp granulated sugar. Pour in melted butter and stir mixture until evenly coated. Divide graham cracker mixture among 24 paper lined muffin cups, adding about a heaping Tbsp to each. Press mixture into an even layer. Bake in preheated oven 5 minutes. Remove from oven and allow to cool while preparing filling.
  • In a small mixing bowl, whisk together 1 1/2 cups granulated sugar with 3 Tbsp flour until well blended. Add softened cream cheese to a separate mixing bowl and pour sugar mixture over top. Blend mixture on low speed until smooth. Mix in eggs one at a time and blend on low speed, while scrapping sides and bottom of bowl and mixing just until combined after each addition. Add vanilla, sour cream and heavy cream and mix just until combined. Tap mixing bowl against counter top several times to release some of the air bubbles. Divide mixture among muffin cups filling each cup nearly full. Bake in preheated oven 20 - 23 minutes, centers should still jiggle slightly, don't overbake (if they begin to crack they are starting to become overbaked). Remove from oven and allow to cool 1 hour. Cover loosely with plastic wrap and transfer to refrigerator and chill 2 hours. Serve chilled with a spoonful of Salted Caramel Sauce or Strawberry Sauce (note: for best results spoon topping on just before serving). Store in an airtight container in refrigerator or freeze.

  • * caramel sauce *
    ingredients:
    • 1 1 /2 cups granulated sugar
    • 1/4 cup + 2 Tbsp water
    • 6 Tbsp salted butter
    • 1 cup heavy cream
    • Maldon or coarse sea salt, for sprinkling
    directions:
    • Gather all of your ingredients and have them nearby ready to add to the mixture as needed. In a heavy-bottomed 3 quart saucepan, heat sugar and water over moderately high heat whisking constantly to dissolve sugar. Once mixture reaches a boil, stop whisking and allow mixture to boil until it reaches a dark amber color, carefully swirling pan occasionally. Once mixture reaches a dark amber color, immediately add butter and whisk until butter has melted then immediately remove from heat. Wait 3 seconds then carefully pour in cream and immediately whisk to combine (it will bubble vigorously). Whisk until mixture is smooth. Allow caramel to cool several minutes then pour into a glass jar to cool. Sprinkle lightly with sea salt after spooning caramel over cheesecakes.

are you feeling it

Summer is so close... I can just feel it! I swear my bones just tell me when the summer months are near. I'm in need of long walks on the beach, colorful drink stirs, yummy popsicles and afternoon naps under big shady trees! I crave calm in my life right now... If I had a recipe for that I would hold it dear to my heart! I know that's not reality... But I can work for peace in my life. Any distraction from others I'm just walking away. Funny thing... I'm working on a new project and starting up another one this month and I feel so in control. One step at a time... Summer please take my breath away this year! I need that so much... A summer to remember!
