who's #er 1...

Well, I did it... Ran the Encinitas 5k this Saturday... I had a blast!!!! My running partner was Grace {grace happens} & my cousin, Polly, & her little ones, India & Gwenny. Shhhh we all talked the entire run {little walk}. I'm a little upset that I didn't take my daughter, Taylor, who by the way was still asleep when I left the house {lucky}. Taylor would have had the best time. So many families were out & about. It felt good to support Encinitas & to be healthy! I'm going to sign up for next year & the year after.... & the year after.... Get my point! Good times! Sorry, I didn't take more pictures... I didn't bring my camera. Grace took these pictures from her iphone. Thanks Grace! Don't I look half a sleep in these pictures. ha ha ha My eyes kept watering. I think that was because of the cold weather. Morning mist...

I hope you enjoyed these pictures. I really can't tell you how much fun we had. The spirit, excitement & family feeling was amazing. I know how weird to say family, but their were tons of moms & dads walking & running with their kids. Way to go! I think we all need to be more healthy & involved in exercise with the entire family. That's my new goal with my children! Yaaaaaaaaaaaaaaa Hope to see everyone next year at the race! For all the friends I saw Saturday, You're AWESOME!

I think I'm in love... The moment I saw these Homemade Granola Bars from GOOP I knew I had a fun & yummy project a head of me! Can't wait to make {eat} these...

Completely healthy & totally easy. A great breakfast or after-school snack too. {music to my ears}

- 1 1/3 cups quick-cooking (not instant) rolled oats, divided
a pinch each fine salt, ground cinnamon, ground nutmeg and ground ginger
- 1/4 cup flax seeds
- 1 cup dried apricots, roughly chopped (or any combination of roughly chopped dried fruit and/or nuts)
- 1/4 cup canola oil
- 1/4 cup high quality maple syrup
- 2 tablespoons brown rice syrup (a great substitute for corn syrup, available at lundberg.com)

Preheat the oven to 350ºF. Line a 8” square baking pan with parchment paper, letting a bit of excess paper hang over the sides.

Grind 1/3 cup of the oats in a food processor until powdery. Add them to a large mixing bowl with the remaining oats, the salt and spices, flax seeds, and apricots. In a smaller bowl, whisk together the wet ingredients and then stir them into the dry ingredients.

Put the mixture in the prepared pan, smoothing the top with a rubber spatula. Bake for 1/2 hour, or until evenly browned. Remove from oven and let cool for about 15 minutes. Remove to a cutting board (the parchment paper will act as a sort-of sling, making this very easy). Cut into individual granola bars.

I'm such a sucker for seascapes... Usually, I lean more towards the classic seascapes, but this one just grabbed me. It's a little more va va voom then I like. I think It looks pretty good next to my newly purchased fruit from Henry's... Hey, I'll be a sucker for 25.00... OMG!
