are you ready?


So, have you made your 2014 New Years Resolutions list yet? Hmmmm What are your goals for 2014? Do you have any... Eat healthier, be kind, laugh more, go out with real friends, manage your money better... Read more... More, More, More!  Of course my list could be endless if I really thought about it... But you know what, I think I'm going to do something totally outside the box for me this year... Write down 5 things {only 5} and then burn the list right after I write it. If I remember the 5 things on my list... Then that means these resolutions are very important to me and I can accomplish them. I don't need to keep going back to a a list to remind myself what I need to do throughout the year. Life's everyday challenges are enough for me already... So too add more things to it yep, not gonna happen. I bet you all already know what one of my resolutions is going to be... Simplify! I'm excited to start a new year... A fresh start is a good thing! 2014 will be fabulous... I feel it in my mind, body and soul! Be safe tonight and have the time of your life! No regrets! See you all next year...

rustic rooster {the challenge}


HI blogger friends... I'm alive! Yes, alive and chugging along. I don't know if you all feel like I do... Happy, but oh so overwhelmed with everything {christmas, new years, work, kids... life}. I'm getting ready to move so the packing is starting to scare me. Eight years in one spot...  Oh my all the crap and stuff to box up. WOW, OK I can do this! Mind over matter... No biggie right!?!?!?! I guess I can look at it all as one big clean out fest! Donate and trash...  ha ha ha 


I know I've promised you all the world {here & here}, but haven't delivered yet! The guilt is killing me. Sorry! I did accomplished one thing on my {try try try} list!




I went paddle boarding at the Carlsbad Lagoon. Oh my gosh I had a blast! It was awesome... I'm not hooked, but it definitely was a fun adventure for me. I could do it again... I said this on my {instagram} account; 

My arms are sore, sides are tender, forehead slightly sunburned, legs are jelly... But I'm glowing from ear to ear! I did it... Paddle Boarded! 

So onto the next adventure... I want to take an art class. I'm searching! Don't think I'm flaking on that one... Just haven't found a good one that I want to sign up for. If you have a good one to recommend, please do! I did find someone who's going to take me to the gun range. We're just waiting for the holidays to pass... Then it's on! Everyone says that is such a powerful feeling! I'm looking forward to that...    

I think my next challenge will be this... It's the 24 day challenge by Advocare. My Yoga studio is offering this.  I'm still sitting on the fence if I want to do it or not... What do you all think? Looks good!

rustic rooster {the menu}

 

* Italian Sausage Tortellini Soup *

 
Yield: Serves 6
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes

Hearty soup with Italian sausage, cheese tortellini, red peppers, and kale. Everyone always requests this recipe!

Ingredients:

1 lb. Italian Sausage, rolled into 1/4 teaspoon size balls
1 tablespoon olive oil
1 small onion, diced
3 cloves garlic, minced
2 red bell peppers, diced
1 bay leaf
1/8 teaspoon red pepper flakes
8 cups vegetable or chicken broth
2 (15 ounce) cans diced tomatoes
1 1/2 cups chopped kale
2 cups cheese tortellini (fresh or frozen) 1/4 cup chopped fresh basil
Salt and black pepper, to taste

Directions:

1. In a large skillet, brown the mini sausage balls until cooked through. This will take about 5-7 minutes. Drain off the grease and place the sausage balls on a plate lined with paper towels.

2. In a large pot, heat the olive oil over medium high heat. Add the onion and cook until tender, 3-4 minutes. Stir in the garlic and cook for 2 minutes. Stir in the red peppers, bay leaf, and red pepper flakes. Cook until peppers are soft, about 3 minutes.
 
3. Stir in the broth, tomatoes, and kale. Add the cheese tortellini and cook until tortellini is tender, 7-8 minutes. Stir in the fresh basil and season with salt and pepper, to taste. Stir in the mini sausage balls and heat until warm. Remove the bay leaf and serve.

* Note-you can make this soup vegetarian by using vegetable broth and omitting the sausage. Josh always ladles up my bowl first, and then adds the sausage. This soup recipe is very adaptable!

It's here... The Encinitas Christmas Parade is tonight! Yaaaaaaaaaa My kids and I are so excited!!!! If you're in the Encinitas area today between 5:00pm and 7:30pm grab a blanket, cup of hot coco and a lawn chair! Santa's coming to town with all of Encinitas! It's a family tradition for us... We love it! Seeing all the kids smiling faces brings me pure joy! So much love and laughter is ringing throughout old Highway 101... Stop by and say hi!

Dressing for a man can be such a challenge... I get it! I have my own issues! I'm not a trendy girl.. I tend to go for the classics, so of course when I look at men dressing I steer towards a classic look. When I see a man wearing skinnies or the latest fashion statement I can't help but chuckle. Sorry men, but it is funny! Here's a subtle hint of what you should be wearing... {wink}!

shop local...




I know it's so exciting to go down to the mall and shop the big retail stores... Believe me I know. Yesterday, for the first time ever I did it with my kids. My daughter, Taylor begged me to go with her cousins... First off, I think I nearly had a panic attack... Way too many people were out and about, that I was overwhelmed and slightly annoyed. After seeing the lines for waiting rooms wrapped around stores, I started thinking... Really what am I doing? Why am I out and about trying to fight all of these crazy mad people just to save a buck or two.  Well, I do have to say it was an experience I will never forget. I know next black friday I will walk the streets in my local neighborhood and purchase from small stores. I feels so guilty because I am an owner of a small business. OK I'm human... But please stop and think about your local brick and mortar stores! Small businesses need your love and continuous support through the Christmas season. Take a moment today to walk the streets and shop small local businesses! Thank you {huge smile}!!!!!!

So what are you wearing for Thanksgiving? Hmmmm this looks like the perfect attire for the day. Cool, calm, classic and definitely oh so chic!  I just love everything about this look!
