Healthier Slow Cooker Creamy Tortellini Vegetable Soup

Slow Cooker

  • 1. Heat the olive oil in a large pot over medium heat. When the oil shimmers, add the onion, garlic, thyme, basil, oregano, fennel, paprika, and a pinch each of salt and pepper. Cook 5 minutes, until very fragrant. Remove from the heat and add to the bowl of your crockpot. Stir in the tomato paste, carrots, and celery.
    2. To the crockpot, add the wine, broth, and a pinch of red pepper flakes. Cover and cook on low for 6-8 hours or on high for 4-5.
    3. During the last 15 minutes of cooking, stir in the kale, cream, parmesan, and the tortellini.
    4. Serve the soup topped with additional parmesan and fresh oregano, if desired.

Instant Pot

  • 1. Set Instant Pot to sauté. Add the olive oil, onion, carrots, celery, garlic, thyme, basil, oregano, fennel, paprika, and a pinch each of salt and pepper. Cook 5 minutes, until very fragrant. Stir in the tomato paste. Turn the Instant Pot off.
    2. To the instant pot, add the wine, broth, and a pinch of red pepper flakes. Cover and cook on high pressure for 6 minutes.
    3. Once done cooking, use the natural or quick release function. Set the Instant Pot to sauté. Stir in the kale, cream, parmesan, and the tortellini. Cook until the kale is wilted, about 10 minutes. Turn the Instant Pot off.
    4. Serve the soup topped with additional parmesan and fresh oregano, if desired.

Stove-Top

  • 1. Heat the olive oil in a large pot over medium heat. When the oil shimmers, add the onion and cook 5 minutes, until golden. Add the carrots, celery, garlic, thyme, basil, oregano, fennel, paprika, and a pinch each of salt and pepper. Cook another 5 minutes, until very fragrant. Stir in the tomato paste. Add the wine, broth, and a pinch of red pepper flakes. Simmer over medium heat for 20-30 minutes, until the carrots are tender.
    2. About 10 minutes before serving, stir in the kale, cream, parmesan, and the tortellini.
    3. Serve the soup topped with additional parmesan and fresh oregano, if desired.

Toasted Ham & Cheese Croissant Sandwich
{recipe from... here}

Ingredients

  • For the whole-grain mustard:
  • 2 Tbs. yellow mustard seeds
  • 2 Tbs. brown mustard seeds
  • 1/4 cup apple cider vinegar
  • 2 Tbs. water
  • 1 small pinch of salt
  • 2 Tbs. honey
  • For the sandwiches:
  • 4 large croissants, sliced in half lengthwise
  • 4-8 Tbs. fig butter (or fig jam, anything you have!)
  • 8-14 slices good deli ham
  • 1 (6 oz) wedge Roth’s Grand Cru cheese, thinly sliced
  • A few Tbs. whole grain mustard
  • Micro greens, or any greens you want to use
  • About a Tbs. everything bagel seasoning
  • 2 Tbs. honey

Instructions

  1. Place the brown and yellow mustard seeds in a spice grinder and pulse a few times until it’s mostly ground. Transfer to a small jar and add the apple cider vinegar, water, pinch of salt and the honey. Cover and shake it up to combine, and let it sit, sealed on the counter for eight hours. Then transfer to the fridge to mellow and thicken.
  2. Preheat your oven to 375.
  3. Spread the fig butter on the bottom croissant halves. Layer a few slices of ham on top of the fig butter, then a few slices of cheese, then the micro greens. Spread the mustard on the top halves of the croissants. Place the top half on the sandwich, and brush the warmed honey over it. Sprinkle the everything bagel seasoning on top. Now bake the sandwiches on a rimmed baking sheet for 6-8 minutes, until the cheese starts to melt and ooze out the sides.
  4. Slice and serve! (With coffee and mimosas, duh.)
  5. Makes four sandwiches.

autumn light...


The days are growing shorter, and the skies are often grey. Lately, I have found myself having to turn on a lamp or two during the day. Hey, that rhymes... Anyway, the point is that our use of indoor lighting will continue to increase as we move into winter. Personally, I am not a fan of overhead lighting, so I welcome the switching on of sources of light that create a warm glow and pleasant atmosphere. 

There are many sources of light that will do the trick, from candles, to floor lamps, and sconces. However, today we will be looking at the table lamp. In addition to giving off quality light, it is also a wonderful decorative piece, providing both form and function. Here are a few that I am loving...

We have all heard the fashion rule that white should not be worn after Labor Day. Well, this rule was made to be broken! And, if you don't agree, you will after you see these fabulous looks! To make the look work for you, wear your whites in heavier, fall-friendly fabrics, like wool, denim, and cashmere. Trust me... Just do it!
