Grilled Skirt Steak Tacos

For the grilled skirt steak:

  • 1 tablespoon puréed chipotle in adobo sauce*
  • 1 tablespoon packed light brown sugar
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 tablespoon kosher salt
  • 1 lime juiced
  • 2 pounds skirt steak trimmed of silver skin
  • 1 package corn tortillas

For the pickled onions:

  • 1 pound red onions halved and thinly sliced
  • White wine vinegar
  • Granulated sugar
  • Kosher salt
  • 2 garlic cloves
  • 1 tablespoon whole black peppercorns
  • 1 tablespoon coriander seeds
  • 1/2 tablespoon dried red pepper flakes
  • 1 teaspoon yellow mustard seeds
  • 1 fresh bay leaf

To serve:

  • 1 bunch cilantro coarsely chopped
  • 1 jalapeño thinly sliced into rounds
  • 2 limes sliced into wedges

Brie & Bacon Omelette

Ingredients


  • 3 large eggs (per omelette)
  • salt and pepper to taste
  • 3 strips streaky bacon (per omelette)
  • slices Brie cheese (per omelette)

Instructions

  • Fry the bacon in a hot frying pan until done to your preference. Remove from the pan and slice. 
  • To make the omelette, pre-heat a non-stick pan over medium-low heat. 
  • Whisk the eggs until well combined but not too frothy. 
  • Melt a teaspoon of butter in the hot pan and swirl to coat the bottom of the pan. Pour the egg into the pan and season with salt and pepper. 
  • Loosen the edges of the egg from the pan with a rubber spatula. 
  • Allow to cook until done to your preference. Add the sliced bacon and brie to the omelette then fold over. 
  • Carefully transfer to a plate and serve.

Now this is definitely my dream party! Holy Smokes... Wouldn't this be a m a z i n g to eat dinner and look at outside to this view. I think I would be so mesmerized by the view... I wouldn't be able to hold any eye contact the entire meal. Truth... That's just fine with me!

Blueberry Croissant French Toast Bake

Ingredients

  • 12 tablespoons (1 ½ sticks) salted butter, at room temperature
  • 6-8 large croissants * I used Costco's croissants
  • 2 cups fresh blueberries
  • 1 cup sugar + ¼ cup for sprinkling over the top
  • 6 large eggs, at room temperature
  • 2 ½ cups heavy cream
  • 2 tablespoons pure vanilla extract
  • 1 teaspoon salt

Instructions

  • Preheat oven 375 degrees F. Butter a large 9×13 deep casserole dish with butter.
  • In the bowl of a large stand mixer, beat the room temperature butter and sugar together over medium speed until nice and creamy. Once the sugar and butter are creamed, slowly add the eggs, one at a time. Mix well between each addition. Then add the vanilla, heavy cream and salt. Mix until everything is combined.
  • Tear 6-8 croissants alternating between tearing in half and in thirds. Place the torn croissants in the buttered casserole dish, top with fresh blueberries (blackberries would also be wonderful) and pour the custard over the top. The custard mixture may appear clumpy, that's ok!
  • Sprinkle the top with ¼ cup sugar and bake at 375 degrees F for 30-35 minutes.
  • Serve as is or with whipped cream, maple syrup or powdered sugar! EAT.

Ingredients:
  • 1/2 cup of cottage cheese Daisy Cottage Cheese 4% is my favorite
  • 1/4 cup of sliced tomatoes
  • 2 tbsp of pepitas
  • 1 tbsp of olive oil
  • Black pepper to taste
