Pancake Tacos 

with Caramelized Peaches & Pancetta


  • 1 ¾ cups plain (all-purpose) flour
  • 1 tbsp baking powder
  • 3 tbsp light brown muscovado sugar
  • 1 egg
  • Pinch of salt
  • 1 ¼ cups milk - half fat or full fat
  • 1 tbsp unsalted butter

Toppings:

  • 4 ripe peaches
  • ½ tsp vanilla extract mixed with 2 tsp water
  • 4 tbsp soft brown sugar
  • 1 tbsp olive oil
  • 12 slices approx 100g of pancetta
  • sprigs of fresh thyme
  • 3 tbsp syrup or honey
  • 1 ¼ cups double/heavy cream
  • ¾ cup confectioners' sugar - icing sugar, sifted

INSTRUCTIONS
 

  • Place the flour, baking powder, sugar, egg, vanilla extract, salt, and milk in a large bowl. Use a balloon whisk to mix until combined.
  • Pour ¼ tbsp. oil in a large skillet, then wipe around with a kitchen towel to cover the pan. Heat the pan on a medium heat until hot. Pour in enough mixture to make three pancakes (approx. ¼ cup of mix per pancake). Turn the pancakes over when bubbles form on top and then burst, and the edges start to look firm (about 1-2 minutes). Cook on the other side for another 1-2 minutes. Repeat with the rest of the mixture - oiling the pan each time - until all the pancakes are cooked (you can keep the pancakes warm in a very low oven whilst you’re making each batch).
  • Whilst the pancakes are cooking, whip the cream. Place the cream in a large bowl and whisk until slightly thickened. Add in the confectioners' sugar and whisk again until soft peaks form*. Spoon into a piping bag with a large fluted nozzle and place in the fridge until ready to use.
  • Next, heat up another frying pan (skillet) or a griddle on a high heat.
  • Slice the peaches so you have 12 wedges from each peach. brush with the vanilla-water mixture and sprinkle all over with the brown sugar.
  • Place the peach wedges on the griddle and cook for a minute on each side until the sugar caramelizes. Remove from the heat.
  • Add the pancetta into the frying pan and cook for around 30-60 seconds each side until crisp. Remove from the heat.
  • Now it's time to assemble. Fold one of the pancakes into a taco shape and place on a large serving board/plate/tray. Prop up with a glass or cup on each side to keep it in the taco shape, then place another pancake next to the first in the same way (moving the supporting glass/cup so there're now two tacos in between). Continue this way until all the pancake tacos are in place.
  • Take the cream from the fridge and pipe into each pancake. Top with the peach and pancetta sliced, then top with a few fresh thyme leaves.
  • Serve with syrup or honey.

exterior lanterns {for sale}

 


Plans changed during our remodel and I had to reselect our exterior lighting for our house. I truly was heartbroken...  No joke we had purchased all 14 of these lanterns for the house. Signed sealed and delivered! I really loved these lanterns!  But, lucky for you all... They're available for purchase! I can't use them at all.  I have 14 of them. In perfect  b r a n d  n e w condition... Still in their original boxes. I did open each box to inspect and see if they were damaged when they arrived. Nope they're perfect! If you're interested... southern charmer...

 


I could definitely go with this wallpaper in my entry... Sounds weird, but it's soft and very subtle, but makes a huge statement as you walk in. A true Southern Charmer! James Farmer, you definitely are a fabulous Interior Designer! Love your work!  I wish more people in San Diego would use classic wallpaper in their home. This is such a comforting look to me. What do you think?

Ahh I could stare at house's all day long! How cute is this one! I know the garden is bare right now... But the house still stands tall. Definitely an outside the box color for me on the shutters, but I like it. Its fun and when the green grass and flowers start blooming, I but it will look amazing! I just love looking... Happy Tuesday!

I feel the need for a little vacation! I wish I could just jump up on this Wednesday and jet set on an adventure. I keep thinking of Nantucket & Hawaii. haha Don't ask why... They're both so different, but I think its the fact I would be near the water and able to relax. Hopeful soon I can get away with the kids. Where would travel on this Wednesday wish?

seeing a pattern here...

 






The next and final step with our house is the landscaping... Which is truly the b e s t part, but also a very expensive part! Especially if you want it done correctly... So instead of jumping in super fast and just getting it done... We're doing our homework and researching what suites the yard and our all of our needs. I won't lie... I'm eager to get this finished because miss Molly has brought about a pound a day of dirt in the house. O M G... No joke she sits in the dirt to sunbathe then comes in and shakes dried grass, leaves, mysterious little friends and dirt on the floor. So gross Molly! lol Plus, I can't wait to entertain outside. We still have wonderful weather so I'm super eager!  

Well, Thank goodness for Pinterest, because here in San Diego you don't really find classic New England style landscaping. So a pintresting I go! Aren't these images amazing!  I'm in love with all of them. Green lush grass, cobble stone paths, shell paths, climbing roses, hydrangeas and white picket fences! Wrap it up I'll take them all!  So get ready people... A New England garden is a coming! Any landscaping suggestions? Please share!

Brown Butter Pumpkin Seed & Espresso 

Glazed Big Cluster Granola

Ingredients:

Instructions:

  • Preheat oven to 325 degrees F.
  • In a large bowl combine the oats, shredded coconut, pecans, pistachios, pumpkin seeds, wheat germ and cranberries. Toss well.
  • In a skillet or small sauce pot melt the butter over medium heat until just browned. The butter will melt, foam and froth, then begin to brown along the bottom. Whisk browned bits off of the bottom of the pan. Once the butter is browned quickly remove from the heat and slowly stir in the maple syrup and coconut oil. Sprinkle the espresso powder over top and stir to dissolve. Add the cinnamon, nutmeg and salt. Stir in the vanilla.
  • Pour the warm mixture over the dry oat mixture and stir to fully combine. I normally stir for a good 3 to 5 minutes.
  • Spread the granola out on a parchment lined baking sheet with sides and drizzle with 2 tablespoons honey. Bake for 30 to 40 minutes stirring every 15 minutes so the granola will get evenly toasted. The last time you stir the granola drizzle it with the remaining 2 tablespoons honey. Remove from the oven and let cool five minutes. After 5 minutes spray the bottom of a flat 1 cup measuring cup or a flat bottomed glass with cooking spray. Press the granola into the pan using the bottom of the measuring cup so that you have a flat slab of granola that looks like they could be cut into bars. Let the granola sit for one hour to cool and harden. After an hour break the granola up into clusters.
