monday {menu}

 

via Our Balanced Bowl


Ingredients


  • 1/2 red onion, thinly sliced
  • 1 small bunch of broccoli, thinly sliced into small florets
  • 1/2 yellow squash, thinly sliced into circles
  • 1/2 zuchinni, diced into half-moons
  • 1 cup mushrooms, thinly sliced
  • 3-4 stalks asparagus, chopped into thirds
  • 1 cup sharp white cheddar cheese
  • 2 roasted garlic naan flatbreads
  • 1 tbsp olive oil 
  • 1 tsp garlic powder
  • salt and pepper to taste 
  • feta cheese (for topping - optional)
  • red pepper flakes (for garnish - optional)
  • fresh parsley (for garnish - optional)


Instructions


  1. Preheat your oven to 350. Slice and dice your veggies. Place them in sections on a large sheet pan. Coat with olive oil, garlic powder and salt and pepper to taste. Roast for 5-6 minutes. 


  2. Once the 5 minutes are up, the mushrooms and onions should be done. Remove them from the sheet pan and place them on a plate. Place the other veggies back in the oven, crank up the heat to 400 degrees and roast for an additional 10 minutes. 


  3. Once the other veggies are done roasting, place them on a plate as well. Take your naan bread and place it on your pan and in your oven. Bake for 2 minutes. Remove. Top with the sharp white cheddar cheese and your roasted vegetables along with the sun-dried tomatoes. Bake for 3-5 minutes, or until the cheese is melted. 


  4. Top with feta cheese, fresh herbs and red pepper flakes! Enjoy while hot.

So this Saturday, I am going to take it easy and enjoy a simple Saturday at home, while still making the most of my day. A few things on the list...

Spicy Maple Grilled Chicken Sandwich 

 

Ingredients

  • 1/2 cup real maple syrup
  • 1 tablespoon sambal oelek
  • 2 tablespoons extra virgin olive oil
  • kosher salt and pepper
  • 1 pound boneless skinless chicken tenders
  • 4 slices thick cut bacon, chopped
  • 4 ears corn, kernels removed from the cob (about 4 cups total)
  • 1 teaspoon smokes paprika
  • 1/4 cup fresh basil, chopped
  • 2 green onions, chopped
  • 1/2 cup shredded cabbage
  • 1/2 cup fresh blueberries
  • 4 ciabatta rolls, toasted
  • 1/2 cup plain greek yogurt
  • 1/4 cup basil pesto
  • 1 avocado, sliced
  • Instructions

    • 1. Stir together the maple syrup, sambal oelek, olive oil, and a pinch of salt in a small bowl. Add the chicken to a large ziplock bag and pour half the maple mixture over the chicken. Let sit for 10 minutes. 
      2. Meanwhile, heat a large skillet over medium heat and cook the bacon until crisp, about 5-8 minutes. Stir in the corn, paprika, and pinch each of salt and pepper. Cook 5 minutes and then add the basil, and green onions. Remove from the heat and let cool slightly. Stir in the cabbage and blueberries. 
      3. Preheat an outdoor grill or grill pan to medium heat. Oil the grates. 
      4. Add the chicken and grill for 5-8 minutes per side, basting the chicken with the reserve maple mixture until the chicken is cooked through. Remove from the grill and drizzle any remaining maple mix over the chicken. 
      5. Mix the yogurt and pesto together in a small bowl. 
      6. To assemble, spread the yogurt pesto mix onto the bottom of each bun. Top with chicken, corn, and avocado. EAT!

Its about that time... That time when the mom taxi loads up half the house and makes multiple weekly stops to a number of local sports complexes. All in an effort to raise well-rounded children. Depending on where we reside, we are either freezing in the cold or baking in the sun, as we watch our precious offspring make us proud! Who's idea was this??? As we vacillate between emotions, there are a few things that can help us to have a more enjoyable sports season. Here are a few of my must-haves...

National Love Your Pet Day is on February 20! Our pets have such an important place in our lives, and this is just one of the many days in which we should make an extra effort to show them how much they mean to us. So make sure to spoil them even more to let them know just how special they are. Here are a few ideas of how you can celebrate!


Get them a special treat!

Go for an extra-long walk!

Get them a fun new toy!

Sneak in some extra cuddle time! 

Take them to the groomer (don't forget the bow)!

Make sure that they are up-to-date at the vets!

Make a donation to a shelter or other organization that supports the welfare of animals!

..strolls alley..

I wish I could pick up right now and fly to Charleston, South Carolina. Yup, I would drop everything just to walk down the charming mossy cobblestone streets... Lined with ornate ironwork fences, while the copper lanterns flicker and hitching posts remind you of historic times. Ahh that all sounds so dreamy. Plus, can you just imagine the smell of the Jasmin. Pure Heaven! Who wants to join me?  Just bring sunscreen, a few flowy dresses, a big hat and comfy shoes... and we're set to go!  Charleston I have my eye on you!

Homemade Mini Strawberry Pop Tarts

Ingredients:

  • Double Pie Crust (premade or homemade)
  • ½ cup Strawberry Jam
  • 1 cup finely chopped strawberries
  • 1 cup Creamy Honey
  • 1 drop red food coloring (optional)

Directions:

  1. Using premade pie dough crust (or homemade if you would preferred) roll out the pie dough into a large thin disk using a little flour on the top and bottom of the dough disk to prevent sticking.
  2. Cut out mini heart shapes using a cookie cutter. You can also cut into small squares if you don’t have a heart shaped cookie cutter.
  3. Place the bottom layer heart dough shapes on a lined cookie sheet. Mix the strawberry jam and chopped strawberries together in a bowl. Spoon small amounts of the strawberry filling onto each dough shape.
  4. Place another heart dough layer on the top and seal both layers + filling together by pressing down on the edges using a fork.
  5. Bake at 350 degrees for 15-20 minutes until edges are golden brown. Remove and let cool.
  6. While the pop tarts are cooling mix the creamy honey with 1 drop of red food coloring until you make a light pink frosting mixture.
  7. Spread on top of the mini pop tarts and serve warm!

    Makes 1 dozen

wool rugs in the bathroom (the great debate)...

Wool rugs in the bathroom... There seems to be a debate as to whether or not it should be done. Personally, I LOVE using antique and vintage wool rugs in bathrooms! Wool is a great option for bathroom rugs, being that it is extremely durable. However, as with rugs in any room, there are a few steps that you can take to keep them in top shape. 

Depending on the configuration of your bathroom, you may want to use your rug as an accent and an actual bath mat for when you first step out of the shower. This will keep your wool rug from retaining excess moisture. If a bath mat is cramping your style, you don't have to keep it out at all times. You can store it somewhere nearby and just put it out when needed. 

Vacuum regularly to keep dirt and dust from building up in the fibers. 

Immediately spot clean areas that need attention. If blotting the stain does not work, it may be a good idea to get the professionals to step in and take care of it for you. 

Taking these steps to keep your rugs in good shape will help them hold up in your bathroom and every other room of your home!

Ok... So my daughter has come to me wanting her full bed back in her room. Really?!?! I'm thrilled, but she begged and begged to get a twin daybed in so she had more space in her room. Ahhh well... Life of designer kids. lol Thank goodness I have a few extra pieces of furniture in storage that she could use. This picture is my inspiration for her room. What do you think?

PEACH CRISP YOGURT BOWL

Ingredients:

Homemade Maple Granola...

  • 1 and 1/2 cup oats
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • pinch of salt
  • 1/2 cup shredded coconut Sweetened or unsweetened both work
  • 1/3 cup chopped pecans
  • 2 tbsp olive oil
  • 1/3 cup maple syrup
  • 1/2 tsp vanilla
  • 2 tbsp almond butter

Roasted Peaches...

  • 3 medium peaches
  • 3 tbsp sugar
  • vanilla yogurt

Instructions:

  1. Make the Granola: Preheat the oven to 325. Make the granola according to the directions found in the recipe here

  2. Make the roasted peaches: While the granola bakes, slice your peaches. Toss with the sugar and let sit in the bowl for 10 minutes to bring out the juices. Line a baking sheet with parchment paper, and after the 10 minutes, evenly spread the peaches onto the baking sheet. 

    When the granola is done, turn the oven up to 400 degrees. Once preheated, roast the peaches for 12-14 minutes, until juicy and tender when pierced with a fork. 

  3. Assemble your bowls: Add yogurt to a bowl, top with the warm peaches and some of the granola. Enjoy!

  4. Store: Store leftover granola in an airtight container at room temp for up to two weeks. Store leftover peaches in an airtight container in the fridge for up to 3 days. 

Recipe Notes:

NOTE: This is an awesome, easy gluten-free recipe! Just be sure to buy certified gluten-free oats. 

NOTE: This recipe is also vegan if you use a vegan yogurt!

NOTE: Use whatever amount of yogurt suits you in each bowl. The nutrition info below is based on 1 cup of yogurt in each bowl.
