mildly obsessed
Who wants an amazing workout that will really kick start your "get in shape" routine in high gear? Well, I've got it, but it's not for the weak or feeble. Are you good in 102 degree heat? Can you lift weights, push through intense mountain climbers and do lunges till you can't walk anymore... Still in 102 degree heat? If you said, yes to all of that then you need to try my heated sculpt yoga class in Carmel Valley. It's crazy, but I crave the heat and the intense workout. So good! The instructors help as well. They're all so fun in each class I take. Yes, you have different style teachers and different types of music, but you definitely have the same killer workout... And I really mean killer! It hurts so bad, but you love it at the end! I believe they have a week free trial if you've never been there before... Ask I'm not 100% sure. Hope to see you in a class with me {please say HI}!

resolutions
l e t' s c h a t ...
How's your 2 0 1 7 going? I know we're a few months into this year, but have you stuck to all of your goals? To be honest with you I have! I didn't make that many because I always over commit and then loose steam half way through the year and kind of give up. T R U T H... I just quit... And walk away! This year I decided not to walk away! I wanted to really change my mindset on my work, my children, my eating, my exercising and traveling!
1.) My W O R K... I've been slowing down my projects so I can focus on the ones I have. I'm a one woman show and I want to do my jobs as well as I can! In doing this I have increased my waiting list for projects and have made my clients beyond happy with their end results! I'm more content with this type of work then seeing dollar signs and squeezing in people left and right to make everyone happy. I can't do that anymore... Because I won't be able to deliver the results everyone wants. Starting off honest with my clients... My projects go super smooth and beautifully! In the end everyone is happy and I can sleep at night {haha}!
2.) My C H I L D R E N... I know you all have heard from my previous posts that my children are my world, well they are! So everyday I try and try to be a better mom. Not going to lie I have my moments of freak-outs and guilt of cracking on them. That comes with the package of parenting! Raising 2 children in this day-in-age is very difficult. I try my hardest to be beyond patient and listen to them more and more now. They have such adorable and strong little voices that I love hearing them speak. If I'm upset I give myself a 5 minute timeout and walk away. They crack up when I do this. Hey it works... Try it! Ryan says, Mom why do you tap your head and walk away... I said, Well its better I tap my head then hit yours! He agreed to that! Plus, we have decided to try new things together... Like cooking classes, eating new and fun veggies/fruit and traveling much more! So far they're on board!
3.) My E A T I N G... Oh the common topic for everyone! I love to cook and I love to eat! I know you can do it correctly... But then the problem of portions come into play with me. Since it tastes so good why not eat it all up! Uhhhhh Their you go... That's my ultimate problem! I eat too much! So what I've been doing is cutting my portions in 1/2 and sticking to it. Its been helping me shrink my stomach. I got the extra push last week with my sculpt instructor to do a 10 day cleanse. OK let me state one thing... I don't do week long juicing cleanses I can't and won't. For me I need food... Real food! So now for 10 days I have cut out, flour, sugar, dairy and alcohol. Holy smokes its working and its easy! I just need to get creative with what to make because i've been stuck in my carb ways. {FYI}... I had a glass of wine last night with friends and are you ready for this I feel so bad. My head hurts and my body is sluggish. So their you go... My cleanse is working.
4.) My E X E R C I S I N G... I'm pushing myself harder and harder to conquer this part. I'm in such a good groove right now and loving it. I did injury myself this past summer. I know I will always hit walls and hurt myself, that just comes with the territory. Plus, as I age I know certain things I shouldn't do. But for the first time ever I feel being 40, I've been getting in better shape than I have ever been in my life. I feel really good... Yes sore, but it's a good sore. The one that you say, wow I did it! I accomplished an awesome workout today and its going to change my body! You've got this {lol}! I'm running and doing sculpt pretty much everyday and truly enjoying it! As well as making small goals so I can go farther and longer with my workouts. For example... I only push myself for 5 days hard and then take a day off and be lazy. But what's been happening to me is I crave 5 more days... And keep going.
5.)TRAVELING... I've noticed the more I travel and get out I enjoy life more! Happy mom Happy life {wink}! For a while I wasn't exploring and seeing what the world had to offer... So after watching a lot of my friends jet set all over I knew that traveling was going to be a must in 2017 for me and my little ones. So far so good... We've stuck to our resolutions and are traveling. As a child I was beyond fortunate to travel so much... And so far! Now that's all I want to do for my kids. Give them the gift of exploring the world! I want them to open their eyes up and see everything the world has to offer. You would love sitting at our dinner table and hearing our travel wishes and wants. I have a list of places we want to go to. Hopefully we can get a pinch of our constantly growing list accomplished this year!

AMISH BAKED OATMEAL
ingredients
- 2 large eggs
- 1/2 cup packed light-brown sugar
- 1 1/2 tsp baking powder
- 1 tsp cinnamon
- 1 1/2 tsp vanilla extract
- 1/4 tsp salt
- 1 1/4 cups milk
- 1/4 cup butter, melted (I used salted)
- 3 cups rolled oats (quick oats works fine too)
directions
- Preheat oven to 350 degrees. Butter an 8 by 8-inch baking dish, set aside.
- In a large mixing bowl whisk together eggs. Add in brown sugar, baking powder, cinnamon, vanilla and salt and whisk until no lumps remain. Stir in milk and melted butter then mix in oats. Pour into prepared baking dish and spread evenly (at this point you can refrigerate overnight if desired or bake immediately). Bake in preheated oven 30 - 40 minutes until set.
- Cut into squares and serve warm with fresh fruit, nuts, milk, a little cream or half and half, maple syrup or honey if desired.

SALTED HONEY
COCCONUT MILK
I C E * C R E A M
INGREDIENTS
- 1 tablespoon tapioca starch (or arrowroot starch)
- 1 14.5-ounce can full-fat coconut milk
- 1 14.5-ounce can coconut cream
- ⅔ cup raw honey, divided
- 2½ teaspoons pure vanilla extract
- 1 tablespoon vodka (optional)
- 1½ tablespoons Maldon sea salt, divided (not table salt, VERY IMPORTANT)
- Large bowl filled with ice
- Large Ziploc bag
INSTRUCTIONS
- To begin, mix tapioca starch and 2 tablespoons of coconut milk, stirring to dissolve and create a “slurry”. Set aside.
- In a large saucepan, bring remaining coconut milk, coconut cream, and ⅓ cup honey to a boil. Stir in tapioca starch slurry and boil for 1½ minutes. Then turn down heat and simmer for 3 minutes, until mixture has slightly thickened and will coat the back of a spoon.
- Remove from heat, then stir in vanilla and vodka. Pour into a large Ziploc bag, seal, and submerge in ice bath. Refrigerate ice bath for at least 4 hours, or overnight.
- Pour ice cream mixture into your ice cream maker. I churn mine with my KitchenAid stand mixer attachment, on “stir setting” (low) for 13-14 minutes, until ice cream is of soft serve consistency. At this point sprinkle in ½ tablespoon salt and churn for 30 more seconds.
- Remove bowl from Stand Mixer and spread half of ice cream in the bottom of bread pan or other metal container.
- Drizzle 2 tablespoons honey and ½ tablespoon salt over the top. Spread remaining ice cream over that layer and drizzle remaining honey and salt over the top. Freeze for at least 4 hours before serving.

Nesting BABY-BLUEBIRD CUPCAKES
INGREDIENTS
- 1 1/2 cups shredded coconut (about 5 ounces)
- Miniature Vanilla Cupcakes
- Chocolate Buttercream
- Yellow and light-blue food coloring
DIRECTIONS
- Preheat oven to 350 degrees. Spread coconut on a rimmed baking sheet; bake until light brown, 8 to 10 minutes, rotating pan once. Set aside to cool.
- Lightly frost cupcakes with 1 cup chocolate buttercream; set aside. Tint 2 tablespoons reserved buttercream pale yellow; place in a pastry bag fitted with a #349 Ateco leaf tip; set aside. Tint remaining buttercream light blue; place in a pastry bag fitted with a #11 Ateco plain round tip, and pipe three bluebird heads, 3/4 inch in diameter, onto each cupcake. Using leaf tip, pipe yellow beaks. With a toothpick, add melted-chocolate eyes. Form each nest with 2 tablespoons toasted coconut.

I'm back from my vacation with my little ones {pictures to come - part 1 and part 2}... We had such a wonderful time! I always get beyond inspired when I travel. This time we went up to Los Angeles and then up to Santa Barbara. Such great places to get inspired with Interior Design. So of course I'm back and ready to go, go, go... First on the list of 5 million things to do with the rustic rooster is we're going to have a Coastal Alley S A L E in the month of May. Stay tuned for that Saturday date {9:00am to 11:00am}. Remember it's fast and furious! L O V E that! We have so many good things to sell... And to be honest with you I'm going to have a hard time selling a few things. But its just collecting dust and I know you all would enjoy it as much as I do. So stay tuned...

D O N E... I'm moving in! This home is absolutely beautiful! I can just imagine myself living here with my family! Ahh I can see it now... Kids running all around, to endless celebrations! birthday boy {love}
Well, Well, Well... This not so little kid just turned 9 years old this week. {O M G} How can that be?!?! I seriously remember when I found out I was pregnant with him. Time sure flies when you're having fun! Ryan just wanted a little soccer party... As per his request with just a handful of buddies with pizza and donuts. I can handle that! Unfortunately, were on spring break and his dear friends are traveling right now. So I've decided to throw him a party when he goes back to school. But to still celebrate, "the big guy", we did the family dinner thing down at Corvette Diner {begged to go there} and ate till we were sick to death. Why do we do that? Note-to-Self wear stretchy pants next time! Then one of his little buddies came over to play, soccer on his actual birthday. As you can see he got a soccer jersey that he's "obsessed" with! FYI he still has it on {his birthday was April 3rd}. Seeing this little guy light up always brings me great joy! My kids are my absolute world... The love and happiness they bring me is beyond priceless. Not going to lie... Ryan has always been the true test of everything in my life {anger, patience and love}... But one thing I do know for sure he shows you what love is and how to love purely! A very passionate little guy with a huge heart! Happy Birthday Ryan... I love you with all my heart!
