menu {monday}

iNGREDIENTS
    For the Salad
  • 2 cups Red Leaf Lettuce
  • 2 cups Green Leaf Lettuce
  • 1 cup cherry tomatoes, halved
  • 1/3 cup breakfast radishes
  • 1/3 cup feta, cut into small cubes
  • 2 Persian cucumbers, sliced
  • 1/4 red onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • fresh mint
  • fresh dill
  • For the Greek Vinaigrette
  • 2 tablespoon red wine vinegar
  • 6 tablespoons olive oil
  • 1 teaspoon dried oregano
  • kosher salt and freshly cracked black pepper to taste

INSTRUCTIONS
  1. Arrange all the salad ingredients in a large bowl.
  2. Whisk together the ingredients for the dressing and drizzle on top when ready to serve.
  3. Toss and serve immediately.

Well, the rustic rooster has definitely done a few minor and major changes in the last few years. All for the best... And we couldn't be happier! After much discussion, Mom and I have eagerly given John, our long time employee, an opportunity to run with the painting business we have had for the last 15 years! So as of right now... Are you kidding me... How cute is this! I would love to do this for my kids class. If only we didn't buy our other goodies.  Maybe next year! Are your little ones ready for Valentine's day? We don't have school this Friday so their school is passing out love notes and sweet treats on Thursday! For those of you who needed a little help in the love department for treat ideas.. Here you go! Shhhh I'm going to be a little jealous who ever does this one! Have fun!

How do you show love... Through gifts? Through affection? Through words? Through quality time? Through service? I'll let you think of that one...  FYI I'm through words and gifts {wink}! Have you read The 5 Love Languages before... I think you should! haha You can thank me later!  Something about this kitchen I love. I love the runner. It just pops the entire room! I actually think I could have a picnic with my kiddos right on that rug. Adding in pops of color is so fun! Try it this month! Do something different in your home and even with your wardrobe... Be daring and just love!

rise and shine



POACHED EGG AND AVOCADO TOAST
 
INGREDIENTS:
 2 very fresh eggs
  • 2 tablespoons vinegar (any kind works)
  • 2 pieces sprouted or whole grain bread
  • 1 avocado
  • handful of greens (spinach/chard/arugula etc)
  • salt and pepper
  • drizzle of balsamic reduction
INSTRUCTIONS:
  1. Bring a medium non-stick saucepan full of water (about 2½-3 inches deep) and 2 tablespoons of vinegar to a full boil under a lid.
  2. Break eggs carefully into individual ramekins.
  3. Turn off heat and immediately add eggs gently. To add the eggs tip the corner into the hot water and allow the water to pool into the ramekin. Jiggle the cup slightly to let it start to set the egg, then pour out into the pan. Replace lid.
  4. Set timer for 3-4 minutes for runny eggs, 4-5 minutes for medium. Do not lift lid!
  5. While they are poaching toast the bread.
  6. Smash avocado and season to taste with salt and pepper.
  7. Using a slotted spoon remove poached eggs to a paper towel to drain momentarily. If they are a little underdone to your liking leave in water for another minute or two. (Your locations altitude can affect this timing a bit as water boils at a lower temperature the higher your elevation. The higher your elevation the cooler your water is and thus the longer it will take for them to be finished cooking.)
  8. Top toast with avocado, a handful of greens, poached egg and a pinch more of salt and pepper. Add a drizzle of balsamic reduction if desired

Well, hello there Monday! I've been waiting for you! You can either break me or make me... I'm going to choose make me! Every morning I wake up and say,  5 {or more} things I'm thankful for. I really try... Since it's February 1st, Love month for me and my kiddos I'm going to go that extra mile and do it {smile}

3.) I am thankful for my career/job {interior designer}... LOVE it!
