tuesday {tell all}


This has been on my mind since this weekend... Are you prepared for any medical emergencies?  I'm sure not! Arghhhhh I feel so guilty to say that I need to do this! So much to do in such little time!

Last Saturday My son, Ryan, hit his head on my car. No joke it was a random accident. We all were getting silly after Taylor's soccer game. Ryan hit his head on my break light. OMG I saw it happen. It happened so fast that I couldn't stop him. I went into mommy nurse mode... Grabbed Ryan and quickly nestled him into my stomach applying pressure to his head. Of course whispering shhhh you're ok, shhhhh and acting very calm. I looked down and blood was everywhere. I had a mild heart attack! As I was trying to get Sean's attention, I said the word blood which Ryan heard and freaked out. Everyone who stopped  and helped, thank you so much! We are truly grateful... Thank you!!!!!

So this post was prompted to tell you all be prepared for an emergency {numbers and supplies}! I did buy an emergency kit for our cars last year... Thank God it had an ice bag in it, but it needed much more!  So now, my goal is to have my car packed with proper medical supplies, extra towels, an updated medical/contact list {laminated}... And food and water. Life throws us these eye-opening events for a reason...  We're either prepared or not. I do have to say we were half prepared.  So here's a print out of a medical contact sheet and a blog that has a list of proper things to pack in a First Aid Kit for your house, car and office. Do it people... You never know when you'll need it {hopefully never}, but it's good to be prepared!!!! Hope this tuesday tell all... Opened up your eyes to get this done!

It's time to dream big...  Getting what you want isn't a bad thing! My sister-in-law gave me a book the other day that was all about visualizing what you want and need in your life. I love that! So if you see me day dreaming today... You know what I'm doing {wink}! Dream big people... BIG!

I know you all are rolling your eyes... Saying Really this is your Tuesday tell all, but I'm just going to say it again... Drink more water! Here in Southern California we're experiencing a crazy and long heat wave... That just wont stop! My little guy got sick Saturday night and Sunday... I truly feel it was due to dehydration. I felt awful!  So FYI... Drink more water! I know  me and my family are!!!

rustic rooster {menu}



Meyer Lemon Ricotta Cake

INGREDIENTS:

1-1/4 cup All Purpose Flour
1 teaspoon Kosher Salt
1 teaspoon Baking Powder
4 Meyer Lemons {zest and juice}
1 cup Sugar
2 whole Eggs
1/3 cup of Melted Butter {that has cooled}
1 teaspoon Pure Vanilla Extract
1/2 cup Ricotta Cheese
2 tablespoons Half & Half
FOR THE GLAZE:
1 cup Powdered Sugar
2 to 3 tablespoons {reserved} Meyer Lemon Juice, strained

DIRECTIONS:

Preheat your oven to 350 degrees and lightly spray {I use my mister} and line a loaf pan with parchment paper.
In a medium bowl whisk together the all purpose flour, salt and baking powder. Set it off to the side.
In a large bowl combine a cup of sugar and the zest from 4 meyer lemons. Use your fingers to rub the sugar into the zest.
Add in 1/4 cup of freshly squeezed {and strained to catch seeds} meyer lemon juice. Crack in two eggs, pour in the melted {and cooled} butter, the teaspoon of vanilla and whisk to combine.
In a small bowl combine the 1/2 cup ricotta and the two tablespoons of half and half, stir until smooth.
To the egg/sugar mixture; add one third of the dry ingredients and whisk until just combined. Add in have of the ricotta mixture and whisk some more. Repeat with the dry ingredients and ricotta. Mixing after each addition.
Pour the cake batter into the prepared pan and bake for 50-55 minutes or until a tester comes out clean.
Let the cake cool for 10 minutes before running a knife around the edges and using the parchment paper as handles to lift the cake out of the pan. Allow the cake to cool completely before topping it with the glaze.
FOR THE GLAZE: Add a cup of powdered sugar to a mesh strainer that is set over a medium bowl. Sift the powdered sugar into the bowl. Slowly whisk in a tablespoon at a time of the reserved meyer lemon juice until you've reached the desired consistency.
Pour the glaze over the cooled cake.
Serve once the glaze has had a chance to harden.

hahahahahaha




Don't laugh... But my roommate in college used to say to me, You should be a foot model. You could make so much money! OMG just think of all the things "we" could do with a few hundred dollars. You have gorgeous feet. Of course I thought I could... She was a great motivator {thanks Tia}. I believed I could do it {wink}! So one afternoon we decided to get out the  wanted ads and look up foot modeling agencies. OMG... No joke every place we found... Was all for foot porn. Well, my foot modeling career ended very quickly after the last phone call we made. I think I peed in my pants laughing so hard. Oh a girl could dream! hahaha But, for some reason when I started the rustic rooster's Instagram account... I think my foot modeling career took off. I would just take a picture of my feet depending, where I was, what I was doing or what shoe I had on {poc = pop of color} that day. Now, I do get teased about my feet shots... But you know what A girl can dream. lol Do you take selfies or footsies!

it's time...

 
 

 
I'll be the first to raise my hand... It's time San Diego cools down! This heat wave is so crazy! I'm ok with a few days of heat mixed in with humidity... But really I have slightly wavy hair {looks like I stuck my finger in a light socket if I don't straighten it} and my bun is looking old!  My boots have so much dust on them. I'm now complaining of allergies. When I look at my sweaters I break out in a huge rash and start itching. Now I can't sleep because of this heat... 2 fans and all windows open doesn't even cut it!  All I want to do Is bake yummy fall treats... Yaaa I tried that Monday night and almost fell over because of a heat stroke... Shhhhh I was stuffing my face with a few too many blondies as well.  I missed my sculpt heated yoga class Monday night because it was too hot! I haven't done a proper run in days...  Oppps I've just realized that I'm complaining way too much. Sorry! Is this heat wave killing you all too? Do tell!!!! What have you been doing to keep cool! I guess I need to do more outside meetings and drink tons more ice water... I will remind myself nothing negative stays that way forever... It will soon change in due time {wink}!
