monday's drink {menu}


 P I N E A P P L E    M A N G O    R U M
 · PUNCH ·


Ingredients for Pineapple Mango Rum Punch {servings 1 cocktail}

  • 3 oz of pineapple coconut juice
  • 3 oz of coconut rum {you can also use light or dark rum here instead}
  • 1 oz of mango juice
  • 1 oz of orange juice
  • splash of grenadine {mainly just for looks}
  • lime slices and/or orange zest for garnish
  • edible flowers for garnish

Note for making larger batches: If making a punch, rather than a single drink, treat the ounce numbers above as parts instead. So, for example, if you’re making a large batch of pineapple mango rum punch, you’d use 3 parts pineapple coconut juice, 3 parts coconut rum, 1 part mango juice, and 1 part orange juice.


How to Make Pineapple Mango Rum Punch

Combine all juices (pineapple coconut, mango, and orange) and rum. Then stir. Pour over ice and add a splash of grenadine for color. The grenadine will fall to the bottom and give the drink a pretty ombre look. Then, add lime, orange zest, and edible flowers for garnish.

monday {menu}



i n g r e d i e n t s:


  • 15 ounce can black beans, rinsed and drained
  • 3 large eggs
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla
  • 3/4 cup granulated sugar
  • 1/2 cup white whole wheat flour
  • 1/2 teaspoon Baking Powder
  • 1/4 cup Cocoa Powder
  • 1 pinch Salt
  • 3/4 cup chocolate chips, divided
  • 4 graham crackers, chopped
  • 1 cup Mini Marshmallows

p r e p a r a t i o n:


1. Preheat oven to 350 degrees.

2. Place the beans, eggs, oil, vanilla and sugar in a food processor and puree for 1 minute.
3. Add the flour, baking powder, cocoa powder and salt and pulse to combine.  
4. Stir 1/2 cup of the chocolate chips into the batter and pour into a greased and parchment paper lined 8 x 8 inch pan and top with the remaining 1/4 cup chocolate chips, graham crackers and marshmallows.
5. Bake 30 minutes or until toothpick comes out clean. 
6. Use the parchment paper to remove the brownies from the pan and cut into even squares.

call the dr. {interior design}


When you've been asked by one of the top Pediatric Dermatologists in San Diego to design her new office space... You don't think about it you DO IT! I've had the pleasure of knowing and going to Dr. Bari Cunningham {Comprehensive Dermatology} for years. So this opportunity was so exciting and thrilling for me!  


When Dr. Cunningham purchased the new practice she hired a commercial medical design team to do everything, but saved her little office space for me. I liked to think she hired me because of my fabulous jokes that keeps her in stitches every time I go in for my 6 month mole check {wink}! Nope, I got the job fair and square. We both had the same style!   


I started designing her little box right away! I consulted with my favorite cabinet maker and had a plan! She needed storage with style and a room that set her apart from her day to day routine. 


I had the cabinets painted a cool grey/beige color. Beyond stunning! The rest of her practice is pretty modern... With tons of clean lines and minimal decor.  So by adding the color and beading to her cabinet door fronts... Her little space went to the next level.  

With all the accessories that I put in I made the space feel warm and cozy. She also wanted to incorporate her families photos somewhere in the room. I asked for 3 important pictures and then organizing them together {same frames} and made them pop. Too many gets confusing and then the eye starts to wonder. So this placement of frames worked out nicely!  We didn't want too many accessories as well because she new that her paperwork would start to build up and get messy from time to time.  So it is true what they say, "Less is best!" 


On the left side of this bottom cabinet... We added a mini fridge. She wanted to be able to store drinks and a snack. Such a great idea {1 point for Bari}. By putting it to the back left you can't even tell its there because her chair hides it {1 point for Alexandra}


Well, I hope you enjoyed my first little doctors space I designed... I had a blast from start to finish. Look forward to many more in my future. OH and I highly recommend going to her for your children dermatology needs. Taylor and Ryan go to her and they adore Bari.  Rooster Approved

Today is a day dedicated to appreciating the contributions of the working class and how they help build our country's strength and prosperity! Labor Day has been a national holiday since 1894 and is often celebrated with summer activities. For most of us, it's the unofficial end to summertime and yes, that means all the fun stuff, like last-minute barbecues, camping, picnics and parades. Hope you all stop and give thanks to the men and woman that truly make the good old U S A grow. Stay safe and have a wonderful Labor day!

wild ride {life}


I can't believe how fast this summer went by... I feel like just last week my kiddos were out for the summer. C R A Z Y! Well, my not so little's are back on school and were chugging right along. Soccer season is starting... And our annual heat wave is here, in full force! I can't believe how HOT it is right now. I just have to think that I'm sweating out all my impurities and in the end I'll look fabulous {hahaha}! 

Sorry, for the blog silence I'm engrossed in a few major new projects {amazing}, our home remodel {so exciting} and kids back in school {craziness} that I'm slightly spinning getting it all under control. Everything is wonderful... I just have to remind myself, that its life... And you will always have speed bumps, good or bad. Truth all you need to do is take one step at a time and wrote everything down! Life is wild, mistakes happen and if you can't roll with the punches, you'll be spit out at the next rest stop. Every time I  make a mistake and mess up I remind myself that I'm human and it is OK... When someone judges you or gets angry at you for a mistake you just have to feel sorry for them and take a step back. You can't control  other peoples actions, but you can control your own. Be grateful and enjoy the ride... FYI people we are all human and reality is, we all make mistakes!
