How adorable is this!!!!!
I really would love to make this for my kiddos. I wonder if my kids will even eat more fruit if I try this... Hey, if you don't try it you'll never know! It's time we all get creative with our little ones food! Healthier habits... Go along way! I'm ready to have fun with my kids food...

coastal cottage {interior design}

{rustic rooster} the menu


 


{cheesecakes in jars}

makes 24 little cheesecakes. 
(the recipe is easily halved)
you will need 24 4-ounce regular mouth jelly jars



ingredients
2 cups graham cracker crumbs (16 whole graham crackers, ground)
2 tablespoons sugar
8 tablespoons butter, melted
4 8-ounce packages of cream cheese, room temperature
3/4 cup sugar
4 eggs, room temperature
1 cup sour cream
1 teaspoon vanilla extract (I used 1/4 teaspoon vanilla paste)
zest of 1 lemon

raspberry topping:
2 pints of fresh raspberries
strawberry or raspberry jelly

instructions:
Preheat your oven to 325 degrees F.

Spray the jelly jars with non-stick cooking spray, making sure to spray the bottoms so the crust doesn't stick. Blend the graham cracker crumbs, 2 tablespoons of sugar and melted butter in a bowl.  Place about 1 heaping tablespoon of the crumbs into each jelly jar and tamp down to make the crust (I used a wine cork).

In a large mixer bowl, mix the room temperature cream cheese with the 3/4 cup of sugar until smooth.  Add the eggs, one at a time, and mix well.  Add the sour cream, vanilla and lemon zest and mix until well incorporated. Fill each jelly jar with about 1/3 cup of the filling, leaving room at the top for your topping.

Place the jars in a large roasting pan or two deep baking dishes.  Fill the pan with hot water halfway up the jelly jars.  Place in the oven and bake for 30 minutes.  Remove jars with tongs and place on a wire rack to cool.

For the raspberry topping:  pick over the raspberries and discard any that are moldy or bruised.  Place 7 raspberries on top of each cheesecake.  Heat about 1/3 cup of the jelly in a microwave and stir so that the jelly is spreadable.  Brush the tops of the raspberries gently with the jelly to glaze them.  Refrigerate cheesecakes until ready to serve.  Can be made the day before.

I don't know about you... But I've been on this simplicity kick. I feel that we all already have so much clutter and junk in our lives that less is best in our living spaces. Don't get me wrong, I love everything to have a place and a home... But I just want the architecture and design of the room to stand out. I just finished a master Bathroom... I took the simplicity of bust route! What do you think... Do you like more the merrier?

it's back



I'm sorry I just cant get enough of this soap. It's absolutely amazing... The first time I tried it I was speechless {no joke}.  The smell and texture on my body was amazing. all under one roof... {interior design}


I just love watching a project come together that I've designed from start to finish... It's so thrilling!!!! For this project I was asked to design an office space for an entire family to use and a guest room for their very frequent visitors. My clients were very opened minded and extremely easy going throughout this entire process... A definite true pleasure to work with! They never once questioned or doubted me... The end result turned out fabulous.

end of summer chopped salad...

 
{end of summer chopped salad}


1 large head of crunchy romaine lettuce, rinsed and chopped
1 cup strawberries, chopped
2 avocados, chopped
6-8 oz. Gorgonzola cheese, crumbled
1 cup walnuts
1 cup cooked chicken, chopped
1 cup cooked bacon, chopped
1 cup apples, chopped
1 cup red onion, chopped
1 cup grapes, halved
1 cup oranges, chopped

For the dressing:
 
2 ripe lemons
4 cloves of garlic, crushed
1/2 cup extra-virgin olive oil
1/8 cup red wine vinegar
1/4 cup honey
1 tsp. Dijon mustard
Fine sea salt, to taste

 
 

Arrange each of the chopped salad ingredients in separate bowls. For the dressing, squeeze the lemons directly into a mixing bowl to allow any pulp to come out. Whisk with the garlic, olive oil, red wine vinegar, honey, mustard and a pinch of salt. Taste, and add more salt as needed. If the dressing is too tangy for your taste, add more honey. Toss the salads when ready to eat. Enjoy!
